Our sustainability commitment

We care about our environment, sustainability and the way we look after our team features in every part of the etch. experience. Menus are created to be diverse and give you a taste of the British larder. Changing the menu 6 times a year prevents overusing food stocks and encourages a more varied diet which is better for the environment.  

SOME OF THE THINGS WE ARE DOING TO PROTECT OUR ENVIRONMENT

  • We are reducing what we print and when we do it’s only in black and white. Team rotas, recipes and standards are all online.

  • We are a fully electric site and 95% of the light bulbs used are LED.

  • We are conscious to turn off cookers and hobs when not in use.

  • We have a policy of only using the freshest seasonal ingredients available with over 75% off the ingredients used coming from the UK.

  • We work with the best local producers so that our carbon footprint remains small.

  • We champion British fish, cheese and wine and always feature it on our menus – We were one of the first restaurants to only offer English Sparkling Wine, rather than Champagne.

  • The fish on our menus is sustainable and line caught locally on day boats – We make sure polystyrene boxes are donated to local fishermen so they can be re-used.

  • Oil that is used to cook with in the restaurant is collected and turned in to bio diesel.

  • We recycle used card, plastic and glass.

  • Food waste and coffee grinds are collected and turned in to compost.

  • We pay our team above the Brighton Living Wage.

  • All service charge and tips collected are split between the team fairly.
